Vegetable Baked Ziti

From Jamie Oliver’s book, diced red onion, celery, carrots, leeks, portobello mushrooms, dried chanterelles, garlic, basil stems and leaves, and canned plum tomatoes for the red sauce. White sauce is light cream, creme fraiche, anchovies, and pecorino romano. A layer of spinach and of course pasta mixed in. Very very good dish!
